Panko Crusted Pork Chops

These pork chops have become a must in the Dutton house. Even Miles who is mostly a vegetarian at the age of 2, ate a whole pork chop by himself. The best part they are healthy....:)

4 boneless center-cut loin pork chops
4 large egg white, lightly beaten
1/4 cup panko (Japanese breadcrumbs)
1/4 cup grated Parmesan cheese
1/7 tsp salt
1/4 tsp pepper
1 tbsp olive oil

Place egg white in a shallow dish. Combine panko, cheese, salt & pepper in a shallow dish. Dip pork in egg white, dredge in panko mixture, pressingly gently with fingers to coat.Heat oil in skillet over medium heat. Add pork, cook 3-4 minutes on each side or until lightly browned. Serve and eat!
