Aunt Cat's Fried Tacos

I love, love these fried tacos. Their not your traditional tacos that you would get at Taco Bell or some other fast food joint. Their homemade and that makes all the difference!


Ingredients

1 pound of ground beef
1 package of taco seasoning
1 can of refried beans
1/4 cup of oil
1 package of corn tortillas



Directions

Cook your ground beef and taco seasoning till done. Drain any excess grease. Combine your ground and uncooked can beans together( I always add a little water to help the beans smooth out) Cook till beans aren't clumpy anymore. Turn off heat. Heat oil till hot. ( I turn down my heat when ready to place the taco in the grease, the grease is very hot and will splatter!)Place meat mixture in uncooked tortilla and fold in half. (Careful not to place to much meat in the taco, it will run out of the sides when cooking.) Cook taco on both sides till desired crispiness. Repeat with remaining tacos.

Note: I found out recently that the tacos fried better when the meat mixture was cold.I made left overs and they fried beautifully!


I wish I could take credit for the beans and rice but they were bought from a mom and pop restaurant here in Wichita. My next cooking goal is to master mexican rice!

I keep trying to master some Mexican rice also! I through something together last week that Chris thought was great, but it's not your traditional Spanish rice.

Mine always seems to be to mushy. I fry my rice before hand and I don't mess with it while it is cooking but it always seems to be low on water and then I add to much. Maybe one day....

...and my rice always does not get soft enough, lol!
