Southern Style Potato Salad

This potato salad is not your traditional potato salad. It has lots of onions, pickles, eggs and mustard! This is the only kind we ever had growing up and the only kind that I will eat!


1lb of potatoes of your choice
1 small jar of pickles(diced)
1 medium onion(diced)
4 hard boiled eggs(chopped)
mustard to taste
salt and pepper to taste


Note: With this recipe you can add as much or little as you like

Peel and Chop your potatoes. Cook till tender. When done drain water and add onions, pickles, eggs, mustard, salt and pepper. Mix with a blender, till you get desired smoothness. Transfer to a serving bowl. I like to eat this potato salad while it is still warm.
